Okinawa is the southern most island chain of Japan and serves as a vacation and resort area for those from the northern islands. Before becoming part of Japan, Okinawa was part of the Ryukyu Kingdom with a culture very different from Japan. UKISHIMA Garden pays respect to the old Ryukyu’s by using as much as possible only fruits, vegetables, and tofu that produced in Okinawa. The menu is completely vegan, yet full of different spices and invigorating flavors that need several visits before you can enjoy them all.
